Three steps to a fine, fresh grate.

Prepare the surface

Use a little cold water for garlic, ginger, roots, and vegetables. Keep the grater dry for hard cheese, spice, nuts, and chocolate.

Choose the motion

Move garlic in any comfortable direction. For fibrous ingredients such as ginger, work back and forth across the ceramic surface.

Gather the flavor

Use the brush to lift paste or pulp from the ridges, or build a dip or dressing directly in the ceramic piece.

Silky paste in seconds

Loosen the skin with a garlic peeler, lightly moisten the grater, and hold the clove by its root end. Grate until your fingers approach the root, then discard the remaining end.

Roots & vegetables

Let the ridges do the work

Moisten the surface for ginger, turmeric, carrot, jalapeno, horseradish, radish, and similar ingredients. A steady back-and-forth stroke works especially well for fibrous roots.

Cheese, spice & chocolate

Keep it dry

Hold the grater upright over your plate or recipe and grate until you have the amount you need. Gravity carries fine shavings straight into the dish.

Softer ingredients

Chill first

A brief chill or freeze can make citrus, softer chocolate, banana, and other tender foods easier to grate cleanly.
